Freezer Meals!

Part of my back to school ritual this year is to do FREEZER MEALS weekly!  I've done them in the past and I LOVE the convenience of it!

Dinner time is when the kids get tired and hungry and therefore make dinner prep one of the hardest parts of my day!  I can't handle ornery whiney kids!!  The other dreaded part? Dinner Dishes!

The solution: FREEZER MEALS!

It only takes 5 minutes to pull it out of the freezer and throw it in the oven or crockpot.
AND you only dirty the cooking dishes once a week, making dinner clean up a breeze!

Since FRIDAY is the day I set aside for prepping freezer meals here is the menu for the week: (Sides are made the day of)

Friday: Baked Lemon Pepper Chicken with Brown Rice and Squash
Saturday: Cheesy Chicken Chowder with Rhodes Rolls
Sunday: Lasanga (I cheat and get Stouffers!) with Green Beans
Monday:  Pork Chop Skillet with Steamed Veggies
Tuesday: Left Over Night!
Wednesday: Breakfast! French Toast, Scrambled Eggs, Bacon (Can't prep this one)
Thursday: Stir Fry and Brown Rice (Precook meat only.) 

*I actually didn't FREEZE them!  Because I'll be using them all with in the week I put them in the fridge.  I was worried about how the potatoes and pears would freeze!

First Day of School!

I've been trying to hang on to summer AS LONG AS POSSIBLE! I didn't even get the kids excited about school shopping or the first day, but they didn't need any of my help with that!  Although, I put it off as long as I could.

I was so excited to send Madilyn to school for kindergarten.  She was ready and eager to learn.  Landon has always been more timid.  I worried about him being ready.  Over the last 3 weeks of summer I can't believe how much he has grown and matured!  He's definitely ready!  He didn't even need a hug goodbye!  He was super excited to go meet new friends!

Madilyn was so stinkin' excited last night she couldn't fall asleep!  She stayed up reading books until midnight!! She did ask me to walk her to her classroom today.  She got her stuff in her locker and piped "Good Morning" to her teacher as she bounced in! She was SO full of energy! Her teacher just laughed at her and said "Good Morning" back!

It's going to be a quiet day around here today!  Payden is going to miss the company of the big kids! I'm looking forward to spending one on one time with him.  Reading books, playing trains, having more patients to let him help me in the kitchen!

I've always looked forward to this day.  When all my kids were in school and I'd have to the day to get my things done, then spend the afternoons with them!  It's going to be a GREAT year!!
